One thing to remember when growing herbs is that most are sun loving, and like a free draining soil.
Plants like Lavender and Sage will not do well in damp heavy soil.

There are many varieties of thyme and all have slightly different flavours. Thyme grows really easily, if you have a sunny spot to plant them they get away quickly.
Taking the tips out as it grows to use for cooking helps keep the plant neat and stops it getting too woody.

If you like cooking Italian, Oregano is a must.
Pizza just isn't Pizza without it.
The three varieties normally grown are 'wild marjoram' (common oregano), pot marjoram and sweet or knotted marjoram.

I have found pot marjoram will grow like a weed when established and tastes and smells wonderful.
Sunny well drained position, water well until established, then sit back and watch it grow, I once planted this and lemon thyme in all the space between the planks in a boardwalk, the smell as leaves crushed when stepped on was glorious.

We went o a trip up to selby to the Green Garden Herb nursery i nearby Carlton.... some super herbs there......a huge variety of more unusual ones.....

we bought some vietnamese coriander...not related to normal coriander but similar in flavour, more pungent though, and a beautiful variagated leaf to it.....will pop some in the herb garden when the weather improves...along with about 20 other plants.....I was in heaven.....

we also got seeds....
holy basil, painted sage, my minds gone blank but we got 20 different and unusual ones...

worth going to,I think, though they do mail order too...

I grow a few herbs, but a very useful one is Aloe Vera. You cut off a leaf, and slice off the spikes, then slice the leaf to expose the jelly-like inside. It is the best skin treatment for sunburn and sores. It might grow better in a pot indoors in Yorkshire though.

I use a lot of herbs in cooking - when I'm lazy, I use the blender to chop them - for instance, if I'm making burgers I put the egg, the onion, the garlic and the herbs in the blender together, then add the mix to the mince.

We grow basil with tomatoes - they are good companion plants: so is coriander with cabbage - it confuses the insects. (Here insects are a major problem)

I have a big aloe vera plant in the classroom, the kids love it.....but you're right, it might be a bit chilly here in yorkshire. Likewise it can be a bit cold for basil too...though the more woody meditterranean herbs grow well; rosemary, lavendar, oregano, sage all grow well....
